Overview
Sodium bicarbonate — commonly called baking soda — is one of the most widely used industrial chemicals, with applications spanning bakery, beverages, pharmaceuticals, animal feed, water treatment, and fire suppression. In food applications, sodium bicarbonate is the leavening agent that releases carbon dioxide when reacted with an acidic ingredient (cream of tartar, buttermilk, vinegar, or another acid). In baking powder formulations, it’s pre-blended with an acid for single-step leavening. Beyond bakery, sodium bicarbonate serves as a pH buffer in beverages, an antacid in pharmaceuticals, an alkalizer in Dutch-process chocolate, a rumen support in dairy cattle feed, and a Class B/C fire suppression agent.
