Overview
Potassium sorbate is the potassium salt of sorbic acid — one of the most widely used food preservatives globally, prized for its broad-spectrum activity against molds and yeasts and its effectiveness across a wider pH range than sodium benzoate. Where sodium benzoate works best below pH 4.5, potassium sorbate remains effective up to pH 6.5, making it the preservative of choice for higher-pH products: cheeses, baked goods, pickles, and wines. Five Rivers Materials supplies food-grade potassium sorbate in both granular and powder forms.
Typical use levels range from 0.025% to 0.3% by weight, well within the FDA and Codex regulatory limits. Granular form is preferred for industrial dosing where dust control matters; powder is preferred where rapid dissolution is required. We supply with FCC certification by default, with Kosher and Halal documentation available on request.
